Pseudo-cereals is the name given to a group of dicotyledonous plants since, although cereals are monocotyledons, they share some characteristics with them (Usman et al., 2022). In this way, these plants produced starch-rich grains with texture, palatability, and cooking methods similar to those of cereals (Morales et al., 2021). However, the different botanical origins are reflected in differences in the chemical, physical, and processing properties. Among these, the smaller seed kernel size, the specific starch structure (small starch granule size and architecture, differing content of amylose), the protein composition (gluten-free, differing protein fractions and amino acid composition, greater nutritional quality protein), the dietary fiber and secondary plant metabolites composition, could be mentioned.
