In this article, we investigate the ways in which trust is built between producers and consumers involved in “healthy” products trade that takes place in local fair markets in the Metropolitan Area of Buenos Aires, carried out by the Asociación Civil Sabe la Tierra (Sabe la Tierra Civil Association). The study arose from an ethnographic proposal to be deployed in these spaces through a qualitative methodological strategy that included participatory observation, interviews and document analysis. We illustrate how trust is the result of constant effort between producers and consumers through three mechanisms: one based on proximity; one based on the producers' expertise; and one based on the emotional connection between them. This trust is central to the fair's sustainability and lends credibility to its activities. Finally, we reflect on the fragility of this trust and the emergence of problematic situations that may reinforce it.
