Lactic acid bacteria (LAB) have great technological potential, as they provide distinctive sensory, technological and textural characteristics to dairy products, such as cheeses. Also, many of them are considered probiotics. The objective of the present work was to isolate and functionally characterize LAB present in artisan-made goat cheeses in the province of Santiago del Estero. Fifty strains were isolated and identified as Gram-positive bacilli and cocci. Among them, 14 strains were selected for their technological and functional evaluation. All the strains studied showed the ability to grow and acidify milk, producing lactic acid. In addition, all strains showed proteolytic activity. The amino acid concentration in 24 h- fermented milk was in a range between 0.05 and 6.08 mg/mL. The strains subjected to acid stress (pH = 2.5) presented survival percentages higher than 93%. Furthermore, 12 of the 14 strains exhibited survival rates greater than 75% in the presence of taurodeoxycholic acid. In contrast, in the presence of deoxycholic acid, only three strains achieved survival rates of 70%, while the others reached values in a range of 38 to 67%. Finally, three strains were able to inhibit the pathogenic strain E. coli.
