This research study examines the thermal degradation of vitamin C and phenolic compounds in two fruit smoothies: a base smoothie (BB) and an added carrot fiber smoothie (BF). Both products are treated at different temperatures (70-90 ºC) and times (0-60 min). Experimental data are fitted considering zero and first order models. The results show that degradation of vitamin C and cyanidin-3-O-glucoside during the thermal treatment follows first-order kinetics in both smoothie types. No specific effect of carrot fiber on the content of total phenolic compounds is observed. The z values obtained for BF indicate that fiber has a protective effect on the thermal degradation of vitamin C and cyanidin-3-O-glucoside. It is concluded that the protective effect together with the beneficial effect of fiber consumption per se contribute to increasing the bioactive potential of heat-treated smoothies.
