This work deals with the viability of using three plant proteins (gluten, soybean and carob proteins) as emulsifiers in concentrated O/W emulsions (75 wt% oil). All the emulsions have been processed in a rotor-stator device (UltraTurrax T50), studying the influence of composition (protein and oil concentration) and rotor speed on the rheological properties and the droplet size distribution (DSD). Generally an increase in protein concentration and rotor speed results in an enhancement of the rheological parameters (G’, G’’) along with a evolution of the DSD to lower values, obtaining more structured and consistent emulsions.
