In the present work we focus on the conformation of the pre-fried potatoes agroindustrial complex in the Valley del Uco (located in the central west of Mendoza, Argentina), which is mainly led by large agro-food companies. The chosen methodology consist on the triangulation of qualitative data from primary and secondary sources with quantitative data from secondary sources. Throughout the work, we show a series of factors that were key in the deployment of business strategies linking new productive spaces to new consumption spaces. Valle del Uco possesses large undivided properties, road and electrical infrastructure, virgin soils, and, mainly, aquifers of easy availability to sow those lands. Through drilling and the implementation of technical irrigation systems, these companies located in uncultivated areas. However, the deployment and consolidation of these projects experimented a number of obstacles. These showed evidence not only about the weaknesses of business strategies but also about the flexibility and response’s capacity of these global actors, operating in this technical-scientific-informational environment.
