Foods that are subjected to cooking change their nutritional properties, so it is of interest to analyze these changes. For the test, blueberry fruits (vaccinium myrtillus) harvest 2021 were reserved and samples were prepared to quantify the total content of phenolic compounds by the Folin Ciocalteu method and antioxidant activity by discoloration of the DPPH● free radical. Blueberry extracts of three classes were prepared, fresh, subjected to cooking in an electric stove and the third one cooked in a solar oven. Cooking was carried out until reaching 6° Bx. in each treatment. In solar cooking, a 0.284 m3 box-type solar oven was used, measuring temperatures and solar radiation in the plane of the transparent cover. The results show a variation in the total content of phenolic compounds measured in fresh fruits 6.24 ± 0.30ª (mg Gallic Ac./g MS ), in solar cooking substrate 2.78 ± 0.30ª (mg Gallic Ac./g MS) and in electrical cooking substrate 4.01 ± 0.30ª (mg Gallic Ac./g MS). There are also similar variations in the antioxidant activity of fresh fruits and those subjected to cooking, with a greater difference in cooked fruits in the solar oven, being transcendental in this behavior the cooking times and the degree of exposure to solar radiation. These studies will contribute to the use of renewable energies for the production of food with less degradation of its nutritional quality.
