The automation in cheese making requires the development of sensor devices to monitor coagulation process, especially the hydrolysis and firming phase. The use of a platinum hot wire probe is an important alternative for studying the primary phase of renneting of reconstituted whole milk powder commercial type. In this study, we measured the effects of the critical variables (temperature, enzyme concentration and pH) on the responses: coagulation time (CT), max time of maximum inflection point (t ) and clot firmness in voltage units at to the 30 minutes of aggrega 30 te the quimosine (V ) of renneting milk process using a platinum hot wire probe and a central composite design. Commercial dry whole milk was reconstituted for 22 hours and coagulated using quimosine. A linear regression analysis, 2 order model, was able to predict nd satisfactorily the effects of temperature, enzyme concentration and pH on log CT (R : 0. 9473), 2 max 30 t (R : 0.9550) y V (R : 0.9560). We observed a significant decrease in CT when the enzyme 2 2 concentration (p: 0.0020) and temperature (p: 0.0259) were increased and also when the pH was de max creased (p: 0.0005). The value of t was negatively affected by the pH (p: 0.0005) and the enz max yme concentration (p: 0.0022). In addition, the response t increased with higher temperature (p: 0.0190). This study shows that the temperature was the main variable that 30 induced a decrease in V (p: 0.0039). Under these conditions, the voltage did not reach the maximum asymptotic value in 60 minutes. Since the cheesemaker are unable to observe the app 2 ropriate voltage for cutting and curd management, the addition of CaCl and the lowering pH could improve the dry whole milk powder coagulation properties.
