In this work, the analysis of ahipa (Pachyrhizus ahipa) root macrocomponents was carried out, in order to assess the chemical composition and quality from a nutritional point of view. Certain physiological parameters (respiratory activity, α‐amylase activity) concerning post‐harvest conservation and potential agro‐industrial applications of this product were also characterized. Based on the results obtained, ahipa roots could be considered an energy food and alternative source of gluten‐free starch. The roots (and consequently the flour that could be derived from them) could be used as ingredients in the preparation of foodstuffs for populations with particular nutritional needs. In comparison with other roots and tubers (R&T) crops from tropical and subtropical regions, ahipa roots showed a chemical composition more balanced from a nutritional point of view, making a contribution of protein, fiber and minerals such as potassium, calcium, phosphorus and iron, together with the major component (starch).
