The aim of this work was to study, using a factorial design, the impact of vacuum pressure (P1: 67.7 and P2: 667.3mbar) and vacuum/relaxation periods (t1: 3/3 and t2: 10/10 min) on “fresh-like” quality of Granny Smith apple cubes. Apples were vacuum impregnated with sucrose solution (30 °Bx) with addition of 1% citric acid + 1% ascorbic acid; at 22°C. e analyzed responses were the variation percentage (∆%) of impregnated fruit in relation to cut fruit (control) of: Soluble Solids (SS), pH, aw, firmness (F), colour (L*, C*ab, hab and total colour difference ∆E*ab) and mass transfer parameters: Solid Gain (SG), Water Loss (WL) and Weight Reduction (WR). e ∆%SS, ∆%pH and ∆%aw was affected by P and t. e SS showed greater increase with P2 (27-40%).e pH decreased in all cases. e aw values showed little changes in all cases (maximum -0.4%). e firmness decreased with P2 (31%) but a combination of P1 and t1 generated increase (≈1%). e ∆%L* and ∆E were affected by P and t. e ∆%C*ab y ∆%hab were affected only by P. e L* value decreased with P2 (20-21%), on the other hand, with P1 and t1 condition, L* value increased (≈8%). e C*ab value increased with P1 (12 a 15%) and decreased with P2 (18 a 25%). e hab value in most cases resulted in changes of less impact (increase 0.2 al 7%). With P1 and t1 h* value was negative. e ∆E with P2 showed important changes (∆E*ab>12), otherwise, there were lower color differences with P1. SG was affected by P and t (major increase with P2). WR was affected by P (weight gain in all cases). WL was not affected by any factor (1.8% average) in the range of studied variables. P is the variable that should be controlled with greater precision to maintain the "fresh" quality of the product.
