Commercial gluten-free (GF) cookies are often chosen as a safe snack option. This study evaluatedthe perception and purchasing behavior of commercial (GF) cookies among 188 regular consumers in Argentina. Projective techniques (free association, completion for hypothetical purchase scenarios, and brand mapping with choice/ranking) were used to understand concepts associated with celiac disease, as well as purchase motivation, conditioning factors, and preference directions. Consumers linked celiac disease to five dimensions: food, health, emotions, lifestyle, and economy. The main motivation for purchasing GF cookies was perceiving them as healthy, tasty, suitable for celiacs, good for sharing, and practical. However, the primary purchase deterrents were high cost (53%), taste, and lack of variety. GF cookies were found to be significantly more expensive than their gluten-containing counterparts (between 28% and 69% more). Chocolate chip cookies were the most preferred, while scones had the highest consumption frequency. Despite being perceived as healthy, these GF cookies are highly processed, containing significant amounts of sugars, fats, and additives. The study concludes that it´s crucial to develop more nutritious and affordable GF options for the Argentine market.
