In this work the kinetics of inhibition by pH 3.5 in acetic acid and the thermal death in nutrient broth and dried egg albumin at 72, 77 and 82 °C for three serotypes of Salmonella enterica were identified: S. Enteritidis, S. Typhimurium and S. Montevideo in order to evaluate the effect of pH and temperature. We found that S. Enteritidis and S. Typhimurium had higher survivability at pH 3.5 and higher thermal resistance than S. Montevideo. The survival curves obtained for Salmonella spp. at pH 3.5 in acetic acid, in nutrient broth and albumin dried egg were adjusted to inactivation kinetics of the first order so that the values D, time required to reduce one-tenth the microbial population, were adequate parameters to compare the cells exhibited resistance to the various matrices and different temperatures. These results are important in the field of food technology and food security, as they inform about times and temperatures of Salmonella thermal death.
