In this paper, we discuss diverse bioarchaeological evidence in order to understand the processes of cultigens introduction in central-north Mendoza and its impact on local populations. We analyzed temporal and spatial variation on craniofacial morphological features, dental and postcranial health and nutrition indicators on human samples of pre and post-Hispanic times. The craniofacial and dental data were consistent with the entry of a population to Mountain area after the 1000 ap The ɷ¹³C values suggested the increase of C₄ plants consumption associated with the income of this population, indicating intensification on the production of domesticated plants. The increase on the consumption of carbohydrate was not positively associated with indicators of systemic-metabolic stress or infectious diseases. These indicators were more elevated in the sample of Planicie prior to the 1000 ap, whose ɷ¹³C values reported a lower consumption of C₄ plants. In contrast, there was a reduction of body mass associated with the consumption of mixed diets. The high heterogeneity registered in the variables analyzed in a reduced temporospatial scale further highlights the importance of local studies to understand the factors involved in the development of agricultural practices.
