The corresponding análisis in order to modeling the complex inmersión frying process for natural potato in hot oil (150-180ºC), requires to consider as a first temporal stage along the process (Stage 1), the preheating of the potato sample so soon as it is inmersed. That is before the occurrence of moisture vaporization. The temporal evolution for such stage is given by the time t1 which is necessary in order that an external interfacial potato-oil temperature of 100ºC is reached. In this paper, such stage is modeled and solved, to obtain the temperature profile inside the potato sample and then, the corresponding estimation for t1. Also, a sensibility analysis (in the sense of Landau) for t1 upon some important physical parameters and data for the process is presented.
