The present work seeks to explore the relation between the businessman balance and the salary cost of labor in La Esperanza sugar mill in the province of Jujuy, which constituted, next to Ledesma, the central axis of the capital accumulation model from the end of the XIX century. For this goal, we have access to the company’s investment books and the day books, which, combined with official sources such as agricultural and industrial censuses of 1895, 1914, and 1935, will allow us to build that relationship, identifying cycles in the productivity/salary cost relationship.
