Blueberry has anti-inflammatory and antioxidant properties due to the content of phenolic compounds. An alternative for conservation is to irradiate the fruits with ultraviolet (UV) light. The quality of the Argentine NOA blueberries subjected to UV light was evaluated, analyzing weight loss (PP), content of phenolic compounds (CFT), color and UV-Vis spectra of the fruit before and after the application of the treatment. Blueberries provided by the packing "Tierra de Arándanos S.R.L" located in Monteros, Tucumán, were used. It was observed that the trend of PP between the control and treated sample over time was maintained. The UV-Vis spectra show that the extracts present anthocyanin pigments, which do not vary with the proposed treatment with respect to the control sample, but it was observed that CFT remains unchanged for 7 days in the treated fruit. Irradiated fruits had a higher CFT content compared to non-irradiated fruit. The color difference between the control sample and the sample treated at time zero was low, increasing with the conservation time. From the results, it can be concluded that the suggested treatment appears as a promising alternative since it maintains the organoleptic quality of the blueberry samples studied.
