This review discusses how various water levels affect olive oil concentration and yield, and the main quality parameters and composition of oil used in the categorization of virgin olive oil. Olive oil concentration was higher under water stress or various irrigation regimes. Free fatty acids (% oleic acid), peroxide value, and UV absorbance were mostly affected by fruit handling and paste manipulation. Most studies showed minor or no effects of irrigation on oil free acidity in various cultivars of O. europaea. Several authors reported inconsistent results of the peroxide and UV values at various irrigation levels. Studies indicated that low to moderately irrigated olive trees produced complex oils that were fruitier with a balance of bitterness and pungency. Olive oil composition (e.g., total polyphenols, pigments, vitamin E concentration, volatile compounds, fatty acids) also showed inconsistent results concerning irrigation levels. Results reported in this review can be useful not only for explaining the relation between irrigation management strategies and olive oil yield and quality, but also for guiding future research on this subject.
