While current forms of food production have reduced human malnutrition globally, they have also contributed to increasing malnutrition and deepening pressures on ecosystems. This paper aims to answer: Is there a demand (final and intermediate) that can be seen as a transformation in food consumption? What factors determine the possibilities and barriers to transforming local human diets to diets that prioritize human and environmental health? Based on the pro-environmental behaviour model of Kollmuss and Agyeman (2010), a qualitative research approach was carried out, based on five virtual focus groups and two in-depth interviews in Rio Cuarto city, Argentina. Among the main results, it was found that: 1) there is a tendency to transform the human diet and that this is guided by a question of improving human health, preventing diseases and to a much lesser extent by environmental issues and 2) regarding the intermediate demand (processing and marketing) the interviewed companies started or adapted their business activities towards the intermediation of healthy foods to meet growing demand.
