The goal of this article is to describe the Yerba Mate industry in the Argentine province of Misiones. As part of the study, we examine the activities of small producers which use the traditional drying method known as “sistema barbacúa.” The topic of this study was chosen in light of the socio-historical transcendence of this type of industrialization, associated with culture and senses of belonging. The method of analysis has grown out of a project of recuperation of the barbacúa dryers in central Misiones, promoted by the National Institute of Agricultural Technology and implemented by family farmers. An examination of this form of production and industrialization allows for a recognition of the different processes of agrarian differentiation in a marginal region, to register the strategies of social reproduction of rural social subjects, as well as to examine the economic achievements linked with this practice.
