This work belongs to the general field of Environmental History, that is, the study of the relationship established by societies with their natural environment throughout time. Within this context, this paper attempts to ascertain the value given to the natural environment during the Late Middle Ages through the analysis of a particular work: Jacob de Vitry’s Historia Orientalis, which is a valuable source of information for this subject. We focused our analysis on the author’s portrayal of the cities and the history of their conquest by the crusading armies, and their use and access to water. By doing so, we were able to analyze a rather unknown aspect of the history of Latin-East societies.
