The use of materials derived from plants is essential for the economy and well-being of contemporary societies. Factors promoting this trend are: limited availability of non-renewable natural resources for the sustainability of the industry in general, sustainability of agriculture, the rural economy, new legislation and international agreements that require the use of renewable raw materials in the industry. Catamarca, due to its edaphoclimatic conditions, presents a wide diversity of aromatic plants and meets privileged conditions for quality cultivation and the production of derived materials. Interested in positioning aromatic plants with useful attributes for the sustainability of provincial agricultural systems and in developing knowledge for their use as bio-inputs, this paper reviews the molecular bases of their uses as antimicrobial and insecticide products. In addition, the experience of developing formulations based on extracts of Cuminum cyminum L., Mentha piperita L. and Aloysia polystachya (Griseb.) Moldenke as systems of gradual release of active principles and tested as insecticides of the coleoptera Carpophilus dimidiatus ( Fabricius) (Nitidulidae) and Oryzaephilus surinamensis (L.) (Silvanidae) that infest the nut in postharvest rural areas in the province.
