The aim of this article is to analyze the Chenopodium record recovered from El Carmen 1, a pukara settlement, west-central Santa María valley, Tucumán (around AD 1200–1450). For this purpose, we worked with a sample of 310 macroremains from the excavations carried out in the highest-altitude area of the settlement (housing structure 13, sector VI). The predominance and high density of Chenopodium quinoa Willd. and Chenopodium cf. quinoa Willd. grains with evidence of processing in the combustion structure could correspond to roasting or hydration practices in the framework of culinary preparations. The location of housing structure 13 in the space of greatest hierarchy within the site and its centralized position within the sector suggest the importance of quinoa for the inhabitants of the settlement. This led us to think of its role in the framework of meetings, ceremonies, or ritual events in which the processing and preparation of food or beverages acquire importance.
