The objective of this work was to develop high quality dehydrated candies from blackcurrant, making an integral study of their physicochemical, functional, textural and sensory properties. Healthy lyophilized candies were obtained from blackcurrant, natural yogurt and different sweeteners (honey-isomalt: F1, and isomalt-stevia: F2). The qualitative sensory study showed that blackcurrant-based candies could be accepted satisfactorily by consumers. These candies were characterized by having bioactive compounds that gave them a high antioxidant activity, comparable to that of fruits such as apple and kiwi. An integral texture study was carried out using instrumental and sensory techniques and image analysis, showing very good correlation between the methods. The candies had very different textural characteristics and underwent changes in their texture profile over storage. The sensory study and the analysis of penalties showed that the attributes of hardness, crispiness and color were the ones that showed the most relevant changes in storage. It can be concluded that it is possible to add value to the blackcurrant fruit, which is consumed very little as fresh fruit, taking advantage of its beneficial properties for health and generating two alternatives of healthy candy, one sweetened with honey-isomalt and the other with less caloric content, sweetened with isomalt-stevia. Finally, although the use of different sweeteners allowed obtaining two products with different physical, textural and sensory characteristics, both showed great acceptability by consumers.
