The aim of this work was to evaluate the biofilm formation of nine L. monocytogenes strains from stainless steel surfaces. Nine strains of L. monocytogenes isolated from abattoir cold chamber walls were used. Each strain was inoculated into tubes containing Brain Heart Broth and a stainless-steel section, and were incubated at 3°C. After 3, 6, 12, 24, 48, 72, 96 and 120 hours of incubation, the bacterial count of the steel section was performed. Fifty-five fifty percent of the strains isolated produced biofilms and one strain showed growth at all sampling times. At 120 hours, the biofilms maintained the bacterial concentration within the same logarithm (1.04 to 1.89 log CFU/cm2), this would indicate the persistence of the hazard in the cool chamber. It is considered important that every abattoir have a sampling plan for the isolation and identification of Listeria spp.
