In/ seguridad alimentaria en la Quebrada de Humahuaca-Jujuy. Una revisión de estudios locales para el análisis de preferencias/valoración de alimentos y estado estado nutricional

Abstract

Los procesos y cambios de larga duración que se han producido en la Quebrada de Humahuaca-Provincia de Jujuy, la definen como un territorio complejo y diverso en el ámbito sociocultural y la configuran como una población objeto de múltiples análisis. Ubicado en la problemática de la seguridad alimentaria, este trabajo se fundamenta en los antecedentes de las investigaciones realizadas sobre el tema alimentario en la localidad andina de Humahuaca, para reconocer las transformaciones y riesgos que afectan la salud nutricional de la población. El objetivo es sistematizar la información dispersa para comprender cómo se presentan los pilares de la seguridad en el territorio: disponibilidad, accesibilidad y sostenibilidad; tema que no ha sido considerado de manera integral en trabajos anteriores. De esta manera, pensar en nuevos aportes relacionados con la preferencia/ valoración y estado nutricional en poblaciones rurales de quebrada.

The processes and changes of long duration that have taken place in the Quebrada de Humahuaca-Province of Jujuy, define it as a complex and diverse territory in the socio-cultural field and configure it as a population object of multiple analysis.Located in the problem of food security, this work is based on the background of the research carried out on the subject of food in the Humahuaca Andes, to recognize the transformations and risks that affect the food health of the population. The objective is to systematize the dispersed information in order to understand how the pillars of security in the territory are presented: availability, accessibility and sustainability; a topic that has not been considered in an integral way in previous works. In this way, to think of new contributions related to preference/evaluation and nutritional status in the rural populations of the ravine.
