Limitaciones epistemológicas de las escalas hedónicas verbales para la lectura de la relación cuerpo-alimentos

Abstract

Se parte de reconocer la construcción alimentaria del cuerpo. Objetivo: analizar las limitaciones epistemológicas que presenta la escala hedónica verbal para construir conocimiento acerca de la relación entre el cuerpo y los alimentos. Materiales y métodos: indagación cualitativa; muestra de cinco personas de ambos sexos, residentes de la ciudad de Córdoba, Argentina; mayores de edad; presentan relaciones disímiles con los alimentos/comidas (licenciada en nutrición, estudiante de gastronomía, mujer-madre, persona que disfruta cocinar y comer, persona para quien comer está en un segundo plano); disponibilidad de tiempo e interés de participar. Categoría de análisis: gramática culinaria (alimentos con historia, alimentos sin historia, práctica de cocinar y comer con Otros, práctica de cocinar y comer en soledad). Técnicas: ensueño dirigido, biografía sensorial, entrevista semiestructurada, encuentro de degustación en el que se aplicó la escala hedónica y observaciones participantes, realizadas entre julio-noviembre del año 2015. El análisis se realizó con base en la teoría fundamentada. Se respetaron los resguardos éticos pertinentes. Resultados: se observaron las siguientes ausencias epistemológicas de la escala hedónica: sentidos que se condensan en cada respuesta, confianza entre el dador/el receptor de alimentos, temperatura del alimento ofrecido/sensación térmica del día de la degustación, horario de la degustación respecto a la paleta de sabores que maneja habitualmente el comensal, estado de salud de vías respiratorias, relaciones incondicionales con la comida ofrecida que provoca que siempre “guste”. Conclusiones: la escala hedónica presenta una base epistemológica gastro-anómica.

This qualitative study investigates the dietary construction of the body. Objective: To analyze the epistemological limitations of the verbal hedonic scale to build knowledge about the relationship between the body and food. Materials and Methods: Qualitative research survey. A sample of five participants was selected (male and female), all adult, and all residents of the city of Córdoba, Argentina. The sample presents with relationships with food: a bachelor in nutrition, a student of gastronomy, a mother, a person who enjoys cooking and eating, and a person who eats as a secondary activity. Inclusion criteria included availability and interest to participate. Category of Analysis: Culinary grammar (food with history, food without history, practice of cooking and eating with others, practice of cooking and eating alone). Techniques: Methods used included a guided recall, sensory biography, a semi-structured interview, and a tasting meeting where the hedonic scale was applied and participant observations were noted. The activities were carried out between July-November 2015. The analysis was done based on the Grounded Theory. The pertinent ethical safeguards were respected. Results: The following epistemological absences of the hedonic scale were observed: senses condensed for each answer, trust between the giver and receiver of food, temperature of the offered food, thermal sensation on the day of the tasting, tasting time with respect to the palette of flavors that the diner usually consumes, health status of the respiratory tract, unconditional relationships with offered food that the participant always “likes”. Conclusions: The hedonic scale presents a gastronomic epistemological basis.
