La cultura alimentaria hispanoamericana en la actualidad: Continuidad histórica y transformación del uso de las plantas comestibles en la provincia de Córdoba, Argentina

Abstract

El análisis de la cultura alimentaria con un abordaje interdisciplinario histórico y etnobotánico actual, nos permite comprender de manera integral las profundas relaciones establecidas entre los pobladores, su cultura y su ambiente, los cambios sucedidos en el tiempo y la evolución del patrimonio biocultural de plantas comestibles de los pobladores serranos de la provincia de Córdoba. Se analizan los resultados de publicaciones arqueológicas, etnohistóricas y etnobotánicas de plantas alimenticias en la provincia a fin de identificar especies, prácticas y valoraciones por parte de los pobladores actuales. Se identifica un núcleo de 7 especies silvestres y cultivadas que evidencian visibilidad histórica y etnobotánica con profundas raíces en el tiempo, y la posterior incorporación de 39 especies en períodos hispánicos dando lugar a un mestizaje culinario. Este Conocimiento Botánico Local es mantenido, transformado, resignificado o abandonado y son elementos constituyentes de identidad y patrimonio de pobladores “serranos” evidenciando resistencias y a la vez, flexibilidad cultural y permanente adaptación al cambio.

The analysis of food culture with a historical and current ethnobotanical interdisciplinary approach allows us to completely understand the deep relationships established between the inhabitants, their culture, and their environment, the changes that have occurred over time and the evolution of the biocultural heritage of edible plants of the mountain range settlers of the province of Córdoba. The results of archaeological, ethnohistoric and ethnobotanical publications of food plants in the province are analyzed in order to identify species, practices and perceptions by the current inhabitants. A nucleus of 7 wild and cultivated species is identified that show historical and ethnobotanical visibility with deep roots in time, and the subsequent incorporation of 39 species in Hispanic periods giving rise to a culinary exchange. This Local Botanical Knowledge is maintained, transformed, resignified, or abandoned and are constituent elements of the identity and heritage of "serranos" settlers, evidencing resistance and, at the same time, cultural flexibility and permanent adaptation to change.
