Alimentación con vegetales silvestres en Córdoba, Argentina: Algunos aportes para entender su invisibilización y permanencia desde los inicios del Capitaloceno

Abstract

Desde la conquista y colonización de Abya Yala, y hasta el día de hoy, se continúa destruyendo las formas de vida locales junto a sus sistemas de saberes comunitarios. En este trabajo nos centramos en la denostación/invisibilización de los conocimientos relacionados a la obtención y preparación de comidas, principalmente aquellas basadas en vegetales silvestres provenientes de la recolección, en el centro y norte del territorio conocido actualmente como provincia de Córdoba (Argentina). Nutriéndonos de diversas fuentes, bibliográficas y documentales, y desde una perspectiva sociometabólica, nos aproximamos a las raíces de esta subestimación de los modos de alimentación de los pueblos que habitaban (y habitan) el territorio cordobés. Sugerimos que el comienzo de dicho proceso de invisibilización y reemplazo de las comidas locales con plantas silvestres por otras con especies al gusto de los conquistadores, ocurrió junto al quiebre en los modos de vida de las comunidades originarias recolectoras (período colonial temprano, siglos XVI y XVII) y a la instauración del Capitaloceno. Asimismo, y a pesar de dicho colonialismo alimentario, ha habido saberes y prácticas que permanecieron gracias a la resistencia de los pueblos y que, al día de hoy, son re-visibilizadas y resignificadas en clave agroecológica, de soberanía alimentaria y de reivindicación identitaría.

Since the conquest and colonization of Abya Yala, and to this day, local ways of life have been destroyed along the community knowledge systems associated with them. In this work we focus on the discredit/invisibilization of knowledge related to the preparation of food based on wild plants obtained by gathering, in the center and the north of the territory currently known as Córdoba province (Argentina). Based on the study of various bibliographic and documentary sources, and from a socio-metabolic perspective, we aim to analyze the roots of the underestimation of the food habits of the people who inhabited (and still inhabit) the territory of Córdoba. We suggest that the beginning of this process of invisibilization and replacement of local foods based on wild plants with other foods with species required by the conquerors, occurred at the same time as the break in the ways of life of the indigenous gathering communities (early colonial period, 16th and 17th centuries) and the establishment of the Capitalocene. Likewise, and despite food colonialism, there are practices that prevailed thanks to the resistance of the communities. Today, these knowledge and practices are visibilized and resignified within the framework of discussions on agroecology, food sovereignty and indigenous struggles.
