Haz lo que yo digo: Percepciones sobre alimentación entre médicas nutricionistas

Abstract

Este trabajo surge como una segunda etapa dentro del marco de una estadía etnográfica realizada en el servicio de Nutrición y Diabetes del Hospital General de Agudos Carlos G. Durand (ubicado en el barrio de Almagro en la Ciudad Autónoma de Bs. As.). Para el mismo nos planteamos como objetivo reconstruir cuales son las nociones de alimentación, comida sana y plan alimentario entre las diversas profesionales que atienden en dicha unidad clínica (el servicio cuenta con una planta de personal fundamentalmente femenina). Esta indagación nos permitirá avanzar sobre los criterios de ponderación y valoración (que devienen, luego, en razones para la prescripción) de ciertos alimentos para el contexto específico de un hospital público en la actualidad. Nos interesa específicamente revisar qué razonamientos culturales, científicos y de clase yacen detrás de esas opciones así como también qué tipo de comensalidad se incentiva entre los y las pacientes que buscan en la clínica médica una solución, o un tratamiento paliativo, para sus conductas alimentarias, así como para sus efectos ostensibles: obesidad y sobrepeso. Nuestra indagación busca insertarse dentro de los estudios pertenecientes a la sociología del cuerpo y abrevará a diferentes herramientas cualitativas (entre ellas a la observación participante y la entrevista en profundidad) para distinguir categorías operantes sobre estos tópicos que vinculan dimensiones propias de la práctica médica, la ciencia nutricional así como también saberes en torno a la alimentación construidos socialmente.

This report is presented as a second phase within the framework of an ethnogragrafic staying at the Nutritional and Diabetics Department in the Hospital General de Agudos Carlos G. Durand (located in Almagro neighborhood in the city of Buenos Aires). Our aim was to reconstruct the notions of “nutrition”, “healthy food” and “eating plan” among the professionals who assist in this institution (whose workforce is mainly female). This investigation allowed us to move forward on the consideration and weighting criteria of some food for the specific context of a public hospital these days. We are interested in checking what cultural and scientific reasonings fall behind those notions as well as what kind of commensality is encouraged among the patients who look for a solution or a palliative treatment to their eating habits and to the effect of obesity (overweight) in the clinical medicine. Our investigation is aimed at being inserted in the sociological study of the body and will give us different qualitative tools (such as patients observation and deep interviews) to distinguish the categories which operate on these topics which connect their own dimensions in the medical practice, the nutritional science as well as what should be known regarding social nutrition.
