Inferencias de consumo en un sitio histórico de la ciudad de Rosario a partir de los restos arqueofaunísticos

Abstract

El presente trabajo tiene como objetivo aproximarse a la categoría de “consumo” a partir del análisis de los restos arqueofaunísticos provenientes de un pozo de basura de comienzos del siglo XIX, de la ciudad de Rosario. Dicho período temporal fue escasamente abordado desde las investigaciones arqueológicas de la ciudad, sin embargo, es de suma importancia para la formación de la villa que luego se constituirá como ciudad, a raíz de la expansión mercantil producto de la primera revolución industrial. Además dicha investigación constituye uno de los primeros estudios sistemáticos de restos óseos de fauna para un sitio histórico de la ciudad. Se llevó a cabo la identificación anatómica y taxonómica de los especímenes, calculándose los valores de NISP, MNI, MNE, MAU y MAU%. Por otra parte, se analizaron las modificaciones tafonómicas y antrópicas, para realizar inferencias sobre el consumo cárneo de quienes generaron dichos residuos.

The aim of this article is inquire into the “consumption” pattern in Rosario City in early 19th Century. The archaeofaunistic evidence it which was analyzed for this investigation consist of refuse remains from a garbage pit. That historical period in Rosario City’s history, was scantily approached from archaeological research; nevertheless it has got a great importance in the formation of the village, which then is going to be an important city, as a consequence of the commercial expansion thorough out First Industrial Revolution. Furthermore, this is one of the first systematic investigations of skeletal remains animals in a historical city place. Anatomical and taxonomical identification of the specimens were performed, and NMI, NISP, NME, MAU% and MAU were calculated. Taphonomic modification and the indicators of man activity that the skeletal remains have were analyzed to infer the ways to meat consumption parts of the animal that was eaten in Rosario in 19th Century.
